Cupcake Party at the office

Today, as most Fridays we had cupcakes at the office. YAY!!

One of our interns was leaving after 5 months and our manager made some cupcakes that were delicious (I’ll ask her for the recipe and share with you all).

Cupacke Supplies

What we need to cook cupcakes? This Friday I want to tell you the necessary utensils for make cupcakes:

  • Cupcake pan or muffin tin
  • Pan/foil liners
  • Heatproof bowl: for melting chocolate or beating a cooked egg white frosting
  • Electric mixers (if you go to the gym, you might not need this item.. :-))
  • Graters: it can be microplane or box graters
  • Measuring spoons: one set of dry measuring cups and another one of  liquid measuring cups
  • Rubber or heatproof silicone spatulas in several sizes for folding mixtures together
  • Pastry bag
  • Wire racks: this allows for air circulation of the cupcakes so they don’t get soggy on the bottom.

Cuddly Cupcakes

I know, I know… I was very busy that’s why I  hadn’t posted anything for a while but I  haven’t forgotten your or the cupcakes.

It’s been busy period at work as well as outside work and so I hadn’t been able to find the time to write a post until today(I don’t like to write when I’m in a hurry). In the last month I’ve had my family visiting me to the UL so I’ve been in charge of sight-seeing with them.

This Friday I wanted to share with you this Cuddly Cupcakes picture I took when I went to the Brighton Pier a few weeks ago.

I think these cuddly cupcakes are so sweet! I would like to have one sitting on my bed.

I don’t know why but I love this kind of decorating toys  on my bed. If I manage to get one, I’ll put it as a cupcake decoration. My  bedroom definitely needs one!

Sometimes feeling like a child makes you happier 🙂

Halloween Cupcakes Ideas

Halloween is just around the corner and we all have to start thinking about some Halloween ideas and what we want to do to celebrate it this year; whether it’s a Halloween party, Halloween food, Halloween decoration ideas or just having fun with some Halloween fancy dress:

There are lots of things to consider. Let’s start with our speciality: the cupcakes!

Halloween Cupcakes Ingredients

  • 100g of Butter
  • 100g of Sugar
  • 150g Flour
  • 1 Teaspoon of Vanilla essence
  • 2 Eggs
  • 150g of milk chocolate

Halloween Cupcake Topping Ingredients

  • 100g Butter
  • 300g Icing sugar
  • ½ teaspoon of vanilla essence
  • Orange food colouring (The quantity depends how orange you want your cupcakes – you can also use other food colouring colours to create other various designs such as purple, red, green and black)

Some Halloween cupcakes can be decorated to look like: pumpkins, ghosts, spiders, webs, monsters and black cats – for the less adventurous cook, you can just use standard baking Halloween sweets or Halloween coloured food colouring for your icing.

Now is time to be creative and make the Halloween topping! YAY!

  • Do you remember what we did with the icing syringe?  First fill the icing syringe with the topping and start building a spider web on top of the cupcake. After that we can add spider decorations.
  • Next add the normal topping onto the Halloween cupcake, placing the Halloween sweets on top.

I think this party is going to be really good and I’m looking forward to it as it’s going to be my first Halloween party in the UK. I have been looking for my witch fancy dress, but there is so many I can’t decide which one I want.

Cupcakes Birthday Photos

Tomorrow I’m going holidays!! YAY

Today I was in the office and suddenly all the office started to sang “happy birthday to you…”:  candels and cupcakes became the main characters in the room (and also my red face, I was a bit shame…) Next Tuesday is my birthday and  they decided to celebrate today with strawberry and raspberry cupcakes at brunch time because i wont be here in my birthday.

It was also Katie birthday (is tomorrow). She and Ruth made really nice cupcakes. Acually both are amazing cake  and cupcake cooks.

Taking advantage of the situation I used again my new iPhone App instagram to share with all of you this beautiful and delicious cupcakes.

Yesterday enevening at “english” tea time I coudn’t resist the temptation to ate this cherry cupcake.

My friend bought the cupcakes in Angel Food Barkery, here in Brighton. They where decilious 🙂

I took this photo before ate all of them, and it was my first experience sharing the photo in my new iPhone App “Instagram“. In this app you can put different effects in your pictures and also share them with other people.

Handmade cupcakes accessories

Pink Cupcakes in the office

We know that last Friday we didn’t write any post, but we had a good reason: Paula and I were in Ibiza on holiday. Yay!

Our time as interns at Upstream Connections is over. That means that, after 6 months together, it’s time to begin a new stage in our lives.

For this reason, last Wednesday we had a little ‘see you later’ party in the office (I don’t like ‘goodbyes’) with PINK TOPPING CUPCAKES! 😀

They were AMAZING, so we want to say ‘Thank you!’ to Ruth Perrett, our Operational Manager who made the beautiful and delicious pink cupcakes.

Cupcake Mug

Last Friday morning,  I was making coffee (still a bit sleepy)… and suddenly PUUUM!!!!!!!!

The Marmite fell off from the cabinet where the chocolate for my cappuccino was when I was trying to take it.

But this is not the worst part of the story… the worst part was when I realized that my cupcake mug was broken!!!

I couldn’t  fix it because there where so many small pieces everywhere… and I felt really sad.

When you are used to drink your first coffee of the day always with the same mug, your favorite mug, your cupcake mug… it feels so bad to see it broken.

Anyway I have to recognize that “all bad stories have something positive” and the positive and WONDERFUL part of mine is…

Yesterday, after my lunch break I arrived to the office and I had a cupcake mug in my desk!!!!

My workmates Virginia and Ricardo bought me another magical cupcake mug…


This morning the coffee tasted different in my new mug. From now on, I will be more carefully preparing the coffee in the mornings…

Raspberry Muffins or Cupcakes

Yesterday night I was at home and suddenly I remembered that this Saturday I have a party called “Cakes, tea & champagne”, so I decided to cook muffins with raspberry .

I checked the recipe that my Japanese friend gave me. After that I went to the kitchen to be sure that I had all the ingredients for some muffins for my party.

  • 100 gr of butter
  • 100 gr brown sugar
  • 2 eggs
  • 150 gr flour
  • 1 glass of raspberrys
  • Preheat the oven 180 ºC

The first step is to melt the butter until it gets like mayo (I did it with a fork) I think this is the worst part, but it has to be done!!!

Then, you can add the sugar and eggs  and beat it until it becomes uniform.

Once you have this mixture, add the flour little by little and do the mix without beating it. You should fold the blend if you want your muffins/cupcakes to raise.

Now you can add the raspberrys or other fruits. Feel free to try new things and tell us your experience.

Don´t forget to fill the cupcake molds with the mix and put the creation (the cupcakes) in the oven, around 20-25 minutes.
